Discover the “Product of Lanzarote” with our chef Víctor Valverde, who presents carefully prepared dishes highlighting the fresh and seasonal ingredients that this land offers us. It will not leave you indifferent. For the intellectual part of the meal, as Alejandro Dumas said, you will be accompanied by our sommelier Iván Monreal, among the best sommeliers in Spain ("nº 11 Top Sommeliers España 2024").

Restless, meticulous, curious, Victor discovers the richness and variety of Lanzarote's produce, and sets out to create a cuisine based on the local, his roots, applying the experience acquired under the tutelage of Martin Berasatigui (3 Michelin stars) in his restaurant in San Sebastian, and Sergi Arola (2 Michelin stars) in Madrid. 

His international experience in “W Hotel Starwood” (London) and “Hand Made Food Restaurant” (London), as well as his project “Amarre” in Lanzarote mark his entrepreneurial character.

Gran Canarian, second best Sommelier of the National Sommelier Championship of Spain 2021 and with a dizzying trajectory that has led him to be head sommelier, among others, at Restaurant Amador (3 Michelin stars) (Mannheim, Germany). 

“The focus of the beverage menu at Palacio Ico is based on regional and national products, as well as references from the most important wine regions of the world. We are committed to small winemakers whose philosophy is based on “Terroir” wines and prioritizes environmental sustainability”.
